Cookies – No Bake Cookie Recipes

In our house cookies are essential. I guess I spoiled our kids with homemade cookies because now they won’t touch a bag of the store-bought varieties. Perhaps some of these are the reason.

COOKIE BURGER SLIDERS

Will need:

1/4 cup coconut flakes or grated

A few drops of green food coloring.

1 tube of red decorating icing

48 vanilla cookies

24 Miniature Chocolate Covered Mint Burgers

1 tube of yellow decorating icing

In a zipper bag, mix the coconut with a few drops of green food coloring. It should turn into a nice lettuce green color.

ON the flat side of a vanilla wafer cookie, put some red frosting.

Place a mint patty on top.

Add a small pinch of green coconut.

Apply a small drop of the yellow icing and place another cookie on top, flat side down.

Repeat. Tip: If the top cookie doesn’t want to stick well, add a little more frosting.

Kids love this one. Make 24 sliders.

haystacks

Melt a package of caramel bites in a bowl in the microwave according to package directions. Stir until smooth.

When melted and smooth, add 2 cups unsalted dry-roasted peanuts and 2 cups very thin potato sticks.

Gently stir until everything is coated.

Place it on wax paper with a large spoon to form haystacks. Cool completely.

Makes about 2 dozen.

Variations: You can substitute white chocolate or vanilla baking chips, chocolate chips, or other nuts. However, you will need the potato sticks to make haystacks.

NOT YOUR ORDINARY STORAGE WINDOWS

Milt 1/2 cup butter and 1 package of chocolate chips in a microwave or double boiler. Stir until butter is incorporated and mixture is smooth.

Add 1 package of colored miniature marshmallows.

Place mixture on wax paper and roll into two 6- to 8-inch logs. Chill in the refrigerator until hardened.

When hard, cut into thin slices with a sharp knife. Make slices about 24 1/2 inches.

TWISTED RANGER COOKIES

1 bag of marshmallows

1 stick of butter or 1/2 cup of margarine

Melt the butter. Add the marshmallows and stir until melted and creamy. Just like you do with the rice cereal treats.

To melted marshmallow mixture add

2 cups of rice cereal

1 3-ounce can grated coconut

1 cup pitted dates

1/2 cup walnuts, optional

2 cups cinnamon sugar flavored cereal

2 cups oatmeal cereal with walnuts and honey

Stir until all the cereal and fruit are coated. Pour the mixture into your buttered baking pan. Press down firmly. Cold. cut into squares. About 36 years ago.

Variations: You can use the base of marshmallows and different cereals, fruits and nuts to create your own original cookies. Give it a try.
